- The Hollandaise Sauce: Melt the butter in a small pan until bubbling.
- Place the egg yolks in a blender. With the motor running, gradually add the hot butter to the egg yolks in a steady stream, blend until the sauce is thick and creamy.
- Add the lemon juice and a little warm water if the sauce is too thick, Adjust seasoning to taste with pepper. Remove from the blender and keep warm.
- Fill a wide skillet with water and bring to a boil over low heat. Reduce the heat to a simmer and add the vinegar.
- When the water is barely simmering, carefully break each egg into a cup, then slide them into the pan, one at a time.
- Let stand for 1 minute, then, using a large spoon, gently loosen the eggs from the bottom of the skillet.
- Let cook for an additional 3 minutes or until the white is cooked and the yolk is still soft, basting the top of the egg with the water from time to time.
- Split the muffins and toast them on both sides.
- Top each muffin with a slice of ham, a poached egg and a generous spoonful of hollandaise sauce.
