EGG WITH NUTS

Preparation Method :

  • In a bowl, pour boiling water over the bulgur wheat, and leave to soak for about 15 minutes.
  • Drain the bulgur wheat in a metal sieve, and place the sieve over a saucepan of boiling water. Cover the pan and sieve with a lid and steam for about 10 minutes.
  • Fluff up the grains with a fork and spread out on a metal tray. Set aside to cool.
  • Hard boil the eggs for 8 minutes, under running water, peel and quarter, or, using an egg slicer, slice not quite all the way through.
  • Halve and finely slice the fennel. Boil in salted water for 6 minutes, drain and cool under running water.
  • Combine the eggs, fennel, spring onions, sun-dried tomatoes, parsley, mint and olives with the bulgur wheat. Dress with oil and lemon juice. Season well.

INGREDIENTS

  • 300 grams bulgur wheat
  • 6 small eggs
  • 2 fennel bulb
  • 2 bunch of spring onions, chopped
  • 50 grams drained sun-dried tomatoes in oil, sliced
  • 5 tablespoon chopped fresh parsley
  • 3 tablespoon chopped fresh mint
  • 100 grams black olives
  • 6 tablespoon sesame oil
  • 3 tablespoon lemon juice
  • 100 grams chopped hazelnuts, toasted
  • 6 pitta breads, warmed
  • Salt and ground black pepper
