- Preheat the oven to 200°C/400°F/ Gas 6. Use a pastry brush to lightly brush each slice of ciabatta bread with a little oil. Place the bread on a baking sheet and bake for 10 minutes or until crisp and turning golden brown.
- Meanwhile, make the rouille. Mix together the mayonnaise and harissa. Fry the eggs lightly in a very little oil in a non-stick pan.
- Top the baked bread with the ham, eggs and a small spoonful of rouille. Serve immediately with watercress.
