EGG COCOTTE WITH SMOKED BACON AND SWEET CORN SAUCE

Preparation Method :

  • Preheat the oven. Butter 6 mini mixing bowls.
  • Chop the bacon rashers and fry until crispy then place on kitchen paper.
  • To prepare the sweet corn sauce: bring the milk and cream to the boil, then add the corn and bring to the boil again. Mix and strain. Stir in a little butter and olive oil and season to taste.
  • Break an egg in each mini mixing bowl; add a teaspoon of cream and a layer of sweet corn sauce. Top each dish with a teaspoon of butter and cook for 8 minutes in the oven.
  • Sprinkle with crispy bacon and chervil.
  • Serve immediately.

INGREDIENTS

  • 6 eggs
  • 4 bacon rashers 
  • 50 grams butter 
  • Salt and pepper 
  • 300 grams sweet corn 
  • 100 grams double cream 
  • 300 ml milk
  • 300 ml double cream
  • Chervil leaves
  • 150 ml IDHAYAM Sesame oil
