APPLE AND ROSE PETAL SNOW

Preparation Time :
10 minutes

Cooking Time :
15 minutes

Preparation Method :

  • Peel and chop the apples and cook with the apple juice until soft. Sieve, add the rose water and leave to cool.
  • Whisk the egg whites until peaking, then gently whisk in the sugar. Gently fold together the apple and egg whites Stir in most of the rose petals.
  • Spoon the snow into four glasses and chill. Serve topped with the remaining petals and crisp biscuits or brandy snaps.

INGREDIENTS

  • 5 large cooking apples
  • 300 ml thick apple juice
  • 4 tablespoon rose water
  • 6 egg whites
  • 200 grams caster sugar, or to taste
  • A few rose petals from an unsprayed rose
  • Crisp biscuits or brandy snaps, to serve
