APPLE AND ROSE PETAL SNOW

Preparation Method :
- Peel and chop the apples and cook with the apple juice until soft. Sieve, add the rose water and leave to cool.
- Whisk the egg whites until peaking, then gently whisk in the sugar. Gently fold together the apple and egg whites Stir in most of the rose petals.
- Spoon the snow into four glasses and chill. Serve topped with the remaining petals and crisp biscuits or brandy snaps.

- 5 large cooking apples
- 300 ml thick apple juice
- 4 tablespoon rose water
- 6 egg whites
- 200 grams caster sugar, or to taste
- A few rose petals from an unsprayed rose
- Crisp biscuits or brandy snaps, to serve
