AMERICAN PANCAKES WITH GRILLED BACON

Preparation Method :

  • To make the batter, mix together the flour, salt and sugar. In a separate bowl, beat the eggs and milk together, then gradually stir into the flour, beating to a smooth, thick consistency.
  • Add the bicarbonate of soda and cream of tartar, mix well, then cover and chill until ready to cook.
  • When you are ready to cook the pancakes, beat the batter again. Heat a little oil in a heavy-based frying pan or griddle.
  • Drop dessert teaspoonful  of the mixture into the pan, spaced well apart, and cook over a fairly high heat until bubbles appear on the surface of the pancakes and the undersides become golden brown.
  • Carefully turn the pancakes over with a palette knife or fish slice and cook briefly until golden underneath, then transfer them to a heated serving dish.
  • Top each pancake with a little butter and drizzle with maple syrup. Serve with grilled bacon.

INGREDIENTS

  • 250 grams plain flour, sifted
  • Pinch of salt
  • 2 tablespoon caster sugar
  • 4 large eggs
  • 200 ml milk
  • 2 teaspoon bicarbonate of soda
  • 4 teaspoon cream of tartar
  • Sesame Oil, for cooking
  • Butter
  • Maple syrup
  • Crisply grilled bacon, to serve
