SCRAMBLED FISH & EGG

Preparation Method :
- Beat the eggs and add salt and pepper to taste. Melt the butter in a non stick pan and add the eggs. Cook, stirring, until nearly set. Fold in the fish, cream and mayonnaise.
 - Serve immediately, sprinkled with chives, with hot buttered toast and grilled tomato halves.
 
INGREDIENTS
- 8 eggs
 - Salt and freshly ground pepper
 - 50 grams butter
 - 400 grams fillet smoked fish, cooked and flaked
 - 4 tablespoons single cream
 - 4 tablespoons mayonnaise
 - Chopped chives to garnish
