Preparation Method :
- Pat dry the prawns with kitchen paper. Beat the eggs with a pinch of the salt and a few pieces of spring onion.
- Heat half the oil in a wok, add the pork and stir-fry until golden. Add the prawns and cook for 1 minute, then add the soy sauce and rice wine or sherry. Remove from the heat and keep warm.
- Heat the remaining oil in the wok and lightly scramble the eggs. Add the rice and stir with chopsticks to make sure that each grain of rice is separated.
- Add the remaining salt and spring onions, the stir-fried prawns, pork and peas. Toss well over the heat to combine and serve either hot or cold.

- 100 grams cooked peeled prawns

- 4 spring onions, finely chopped
- 6 tablespoon sesame oil
- 150 grams lean pork, finely diced
- 2 tablespoon light soy sauce
- 2 tablespoon Chinese rice wine or dry sherry
- 500 grams cooked rice
- 150 grams green peas
