STUFFED THAI OMELETTE

Preparation Time :
10 minutes

Cooking Time :
15 minutes

Preparation Method :

  • Heat a wok, add half the quantity of the oil and heat again. Add the garlic and stir-fry until just golden.
  • Add the minced pork, fish sauce, sugar, onion and tomato, adjust seasoning with salt and pepper.
  • Stir-fry the pork and vegetable mixture for about 5-10 minutes or until the pork is lightly browned and the onion turns golden.
  • Heat the remaining oil in a wok, tilt it so that the oil coats the entire surface. Remove any excess oil.
  • Add the beaten eggs, tilt the wok in all directions to form an omelette.
  • Put the stir-fried pork and vegetable mixture in the centre of the cooked omelette.
  • Fold down the four sides like a parcel. Transfer the Omelette with folded side down, Garnish with coriander sprigs and chilli flowers. Serve hot.

INGREDIENTS

  • 150 grams minced pork
  • 150 grams finely chopped onion
  • 1 tomato, skinned and chopped
  • 50 ml IDHAYAM Mantra Groundnut oil
  • 3 teaspoon Thai fish sauce
  • ½ teaspoon sugar
  • 1 garlic clove, crushed
  • 3 eggs, beaten
  • Pepper and salt, to taste
  • Few Coriander sprigs, to garnish
  • 1-2 red chillies, sliced and opened out to look like flowers, to 
  • garnish
