Preparation Method :
- Heat the oil in a wok or large pan and fry the garlic, onion, chillies, cumin, tomato, coriander with sweet corn, potato and tomato until they are well blended but still firm to bite.
- Adjust seasoning to taste with salt and ground black pepper.
- Pour in the beaten eggs. Cover and cook until the bottom layer is brown.
- Turn the omelette over and sprinkle with the grated cheese. Place under a hot grill and cook until the egg sets and the cheese start melting.
- Garnish the omelette with sprigs of coriander and serve with salad.

- 25 grams cooked peas
- 25 grams grated cheese
- 25 grams cooked sweetcorn
- 2 tablespoon IDHAYAM sesame oil
- 50 grams onion, finely chopped
- ½ teaspoon ground cumin
- 3 garlic cloves, crushed
- 2 fresh green chillies, finely chopped
- Few coriander sprigs, chopped
- 1 firm tomato, chopped
- 30 grams potato, cubed and boiled
- 3 eggs, beaten
- Salt and ground black pepper, to taste
- Few coriander sprigs, to garnish
