- Separate the eggs and whisk the egg whites until they stand in peaks.
 - Beat the yolks with salt and pepper to taste, add very little water if needed.
 - Fold the whisked egg white into the yolks just before cooking.
 - Heat the butter in a large frying pan.
 - Pour the eggs into the pan and cook until just set on the bottom.
 - Place the pan under a preheated moderate grill and cook until the omelette is set.
 - Cut the omelette lightly through the centre to make it easier to fold and add the chopped tomatoes and basil leaves.
 - Fold, cook for a minute and transfer to a warmed plate.
