PRAWN AND PEPPER OMELETTES

                    Preparation Method :
- Cook the green pepper in boiling water for 2 to 3 minutes, then drain.
 - Place in a saucepan and add the remaining ingredients, with salt and pepper to taste.
 - Heat the mixture through gently while making the omelettes.
 - Beat the eggs with the water and salt and pepper to taste.
 - Melt a quarter of the margarine in an omelette pan and pour in a quarter of the egg mixture.
 - Cook over a moderate heat, moving the cooked mixture towards the centre with a palette knife.
 - When the omelette is just cooked, place a quarter of the filling on one side and fold over.
 - Transfer to a warmed serving plate and keep warm while making three more omelettes with the remaining ingredients.
 - Garnish with tomato slices and parsley.
 - Serve immediately.
 
INGREDIENTS
- 2 green pepper, cored, deseeded and sliced
 - 500 grams prawns
 - 200 grams cooked peas
 - 4 tomatoes, skinned and chopped
 - Salt
 - Freshly ground black pepper
 
Omelette mixture
- 16 eggs
 - 4 tablespoons water
 - Salt
 - Freshly ground black pepper
 - 50 grams margarine
 
Garnish
- Tomato slices
 - Chopped parsley
