OMELETTES FOO YUNG

Preparation Method :

  • Heat the oil in a large frying pan over a medium heat. Add the spring onions, celery, ginger and garlic, and cook for about 1 minute, stirring frequently.
  • Add the ham, crab meat, prawns, fresh coriander and soy sauce. Reduce the heat and leave the mixture to gently heat through, stirring occasionally.
  • To make the omelettes, heat the butter in a pan. Season the eggs, add a quarter of the mixture to the pan and cook until it begins to set. Turn over and cook for 2 minutes
  • Tip on to a serving plate and keep warm. Cook another 3 omelettes in the same way. Divide the filling between the omelettes and roll up. Serve hot with soy sauce and garnish with coriander.

INGREDIENTS

  • 2 tablespoon sesame oil
  • 4 tablespoon spring onions, chopped
  • 4 celery sticks
  • 3 teaspoon minced fresh root ginger
  • 2 garlic clove, minced
  • 50 grams diced cooked ham
  • 100 grams crab meat
  • 100 grams peeled cooked small prawns
  • 3 tablespoon chopped fresh coriander
  • 4 tablespoon soy sauce, plus extra for serving
  • 15 eggs, beaten
  • 8 tablespoon butter
  • Salt and ground black pepper
  • Sprigs of coriander, to garnish
