Preparation Method :
- Heat the oil in a large frying pan over a medium heat. Add the spring onions, celery, ginger and garlic, and cook for about 1 minute, stirring frequently.
 - Add the ham, crab meat, prawns, fresh coriander and soy sauce. Reduce the heat and leave the mixture to gently heat through, stirring occasionally.
 - To make the omelettes, heat the butter in a pan. Season the eggs, add a quarter of the mixture to the pan and cook until it begins to set. Turn over and cook for 2 minutes
 - Tip on to a serving plate and keep warm. Cook another 3 omelettes in the same way. Divide the filling between the omelettes and roll up. Serve hot with soy sauce and garnish with coriander.
 
INGREDIENTS
- 2 tablespoon sesame oil
 - 4 tablespoon spring onions, chopped
 - 4 celery sticks
 - 3 teaspoon minced fresh root ginger
 - 2 garlic clove, minced
 - 50 grams diced cooked ham
 - 100 grams crab meat
 - 100 grams peeled cooked small prawns
 - 3 tablespoon chopped fresh coriander
 - 4 tablespoon soy sauce, plus extra for serving
 - 15 eggs, beaten
 - 8 tablespoon butter
 - Salt and ground black pepper
 - Sprigs of coriander, to garnish
