OMELETTE ROLLS WITH SPROUTS

Preparation Method :
- Slice one onion and finely chop the remaining two.
- Heat one tablespoon of oil in a pan. Add the garlic and sliced onion and saute till translucent. Add the capsicum and saute for a minute.
- Add the sprouts, dried herbs, chilli flakes, crushed peppercorns and salt and mix well. Divide the mixture into four portions.
- Break two eggs in a bowl, add salt and beat well.
- Heat one tablespoon of oil in a non-stick pan; add a portion of the chopped onions and green chillies and saute for one minute.
- Add the beaten eggs, stir and rotate the pan so that the eggsnspread evenly. Let the underside cook for a minute. Flip over and cook again for a minute.
- Place the sprouts mixture on one side and top it with sev. Fold the other side over or roll up and serve immediately.
- Similarly prepare the other omelette rolls from the remaining eggs.
INGREDIENTS
- 4 eggs
- 50 grams mixed sprouts, blanched
- 50 grams sev
- 2 medium onions
- 1 garlic cloves, chopped
- ½ small green capsicum, cut into thin strips
- ¼ teaspoon mixed dried herbs
- ¼ teaspoon red chilli flakes
- 2 black peppercorns, crushed
- 2 green chillies, finely chopped
- Salt to taste
- 3 tablespoons Cooking oil
