OMELETTE BRAYAUDE
It is never a problem on how you can prepare an exquisite dish for everyone. Once you’ve prepared for this dish, you will surely get an approval from your family. They would even ask you what ingredients you have used. Well, they are as follows: potatoes, oil, eggs, gram butter, double cream and pepper.

Preparation Method :
- Heat the dripping or oil in a large omelette pan, add the potatoes and fry briskly for 5 minutes, shaking the pan constantly.
- Lower the heat, cover and cook for 10 to 15 minutes until the potatoes are almost tender. Shake the pan occasionally to prevent sticking.
- Add the ham, mixing very gently so as not to break the potatoes. Whisk the eggs together lightly, add the butter and salt and pepper to taste, then pour over the potatoes and ham.
- Increase the heat and cook until the underside is golden.
- Turn out on to a plate, then slide back into the pan, cooked side up. When the underside is cooked, cut the omelette in two and place each part on a warmed plate.
- Sprinkle with the cream and cheese and serve immediately with broccoli in wine.

- 4 tablespoons dripping or oil
- 400 grams potatoes, peeled and diced
- 200 grams cooked ham, diced
- 12 eggs
- 30 grams butter, cut into slivers
- Salt
- Freshly ground pepper
- 6 tablespoons double cream
- 100 grams grated gruyere cheese
