INDIAN OMELETTE

Preparation Method :

  • Heat the oil in a small non-stick frying pan. Combine all the remaining ingredients, beat lightly and pour into the hot oil.
  • Cook the over a moderate heat, for about half a minute or until the omelette starts to set.
  • Once the underside has browned, carefully turn over and cook for further 1 more minute.
  • Fold in half and serve hot with toast and ketchup.

INGREDIENTS

  • 1 teaspoon vegetable oil
  • 25 grams onion, finely chopped
  • 25 grams tomato, finely chopped
  • 2 green chilli, seeded and sliced
  • 2 eggs, beaten
  • Salt to taste
  • 1 tablespoon chopped fresh coriander
