                    Preparation Method :
- Heat the oil in a small non-stick frying pan. Combine all the remaining ingredients, beat lightly and pour into the hot oil.
 - Cook the over a moderate heat, for about half a minute or until the omelette starts to set.
 - Once the underside has browned, carefully turn over and cook for further 1 more minute.
 - Fold in half and serve hot with toast and ketchup.
 
INGREDIENTS
- 1 teaspoon vegetable oil
 - 25 grams onion, finely chopped
 - 25 grams tomato, finely chopped
 - 2 green chilli, seeded and sliced
 - 2 eggs, beaten
 - Salt to taste
 - 1 tablespoon chopped fresh coriander
