HASH BROWN OMELETTES
When you wake up early in the morning, the first thing you do is to prepare nutritious breakfast foods. Hash Brown Omelettes would be the best option for you since it comes with highly nutritional ingredients like eggs, onion and olive oil.

Preparation Method :
- Mix together the potatoes, onion, salt and pepper and lemon juice. Heat the oil in a heavy-based frying pan (skillet), and then press the potato mixture in, shaping it into a flat cake.
- Cook very gently over a low heat until the underside is brown. Cut the potato cake in half and turn each half. Pour the cream over and continue cooking until second side is browned.
- Heat half the butter in an omelette pan until sizzling but not browned. Beat 2 eggs and pour into the pan, then use a palette knife to draw the mixture from sides to middle so the uncooked egg runs underneath.
- When the underside is set but the top still runny, place half the potato cake on one side then fold the omelette over.
- Turn the omelette out on to a hot plate, sprinkle with chives. Keep warm while you make the second omelette.

- 4 medium potatoes, cooked and diced
- 2 tablespoon finely chopped onion
- Salt and freshly ground pepper
- 2 teaspoon lemon juice
- 4 tablespoons IDHAYAM Sesame oil
- 4 tablespoons single cream
- 50 grams butter
- 8 eggs
- Chopped chives to garnish
