BREAKFAST OMELETTE

                    Preparation Method :
- Break the eggs into a bowl. Add the salt and pepper to taste and whisk until light and frothy.
 - Stir in half of the cottage cheese and mix well.
 - Heat the oil in a small omelette pan and pour in the egg mixture.
 - Cook over moderate heat, drawing the edge of the omelette into the centre with a knife, as it becomes firm.
 - When the omelette is lightly set, spread the remaining cottage cheese over the top and continue to cook gently for 1 minute.
 - Fold the omelette in half and transfer to a hot serving plate.
 - Garnish with Herbs.
 - Serve immediately, with whole wheat toast and a glass of orange juice.
