- Peel the onions and chop them coarsely. Melt the butter in a pan and cook the onions, covered, for 10 minutes.
- Stir in the flour and cook for 1 minute, then add the stock.
- Add the sage to the pan, cover and simmer slowly for 10 to 15 minutes until the onions are soft.
- Stir in the cream, and add salt and pepper to taste.
- Put an egg in each bowl and spoon the sauce over.
- Serve with Garlic Croutons.

- 800 ml hot chicken stock
- 12 large sage leaves, chopped
- 12 tablespoons double cream
- Sea-salt and freshly ground pepper
