SOUFFLE ROMANTICA

Preparation Method :

  • Grease a 900 ml soufflé dish, and then tie a band of foil around the outside to stand 5 cm/2 inches above the rim.
  • Place the soup in a pan and heat through gently. Beat the egg yolks until thick and creamy, add to the soup and cook for 2 minutes, stirring. Do not allow to boil.
  • Whisk the egg whites until stiff. Fold a little of the soup mixture into them, then add the remainder. Add salt and pepper to taste, and then pour into the prepared dish.
  • Cook the soufflé in a preheated moderately hot oven (190°C/375°F, Gas Mark 5) for 35 minutes until well risen and golden brown.
  • Remove the foil collar.
  • Serve immediately with a green salad.

  • Salt and freshly ground pepper
