BAKED TOMATO EGGS

This colourful egg this is great for your breakfast. Baked Tomato Eggs is cooked with chopped tomatoes, chopped parsley, and small amount of black pepper and salt. This is very simple to prepare so try to have this attractive dish now!
Serves :

Preparation Time :
20 minutes

Cooking Time :
30 minutes

Preparation Method :

  • Cut the tops off the tomatoes, and then scoop out the pulp and seeds. Work the pulp through a sieve to remove the seeds.
  • Put in a bowl with the ham, parsley and salt and pepper to taste. Stir well.
  • Divide the mixture equally between the tomatoes, pressing it down well.
  • Stand the tomatoes in a baking dish and crack one egg into each tomato. Sprinkle lightly with salt and pepper.
  • Bake in a preheated moderately hot oven for 15 minutes until the eggs are set.
  • Serve immediately.

INGREDIENTS

  • 8 large tomatoes
  • 200 grams cooked ham, finely chopped
  • 2 teaspoon chopped parsley
  • Salt
  • Freshly ground black pepper
  • 8 eggs
