BAKED PEPPERS WITH EGG AND LENTILS

Preparation Method :

  • Put the lentils in a pan with the spices and stock. Bring to the boil, stirring occasionally, and simmer for 30 minutes. If necessary, add more water during cooking.
  • Brush the peppers lightly with oil and place close together on a baking tray. Stir the mint into the lentils, then fill the peppers with the mixture. Preheat the oven to 190°C/375°F/Gas 5.
  • Crack the eggs, one at a time, into a small jug and carefully pour into the middle of a pepper. Stir into the lentils and sprinkle with seasoning.
  • Bake for 10 minutes until the egg white is just set. Garnish with coriander and serve.

INGREDIENTS

  • 100 grams lentils
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 500 ml chicken or vegetable stock
  • 3 large peppers, halved lengthways and seeded
  • A little sesame oil
  • 2 tablespoon chopped fresh mint
  • 5 eggs
  • Salt and ground black pepper
  • Sprigs of coriander, to garnish
