SPICY TOMATO DIP

- Tip the tomatoes into a small saucepan, cover and cook over a medium heat for about 3 - 5 minutes in their own juice until soft. Set aside.
- Heat the oil in a heavy-based saucepan over a medium heat and saute the garlic and onion for 3-5 minutes or until soft and translucent.
- Add the green chillies, salt, sugar and lemon juice, stir well to combine. Remove from the heat.
- Process the tomatoes, cumin powder and the onion mixture in a food processor to a smooth puree.
- Serve with starters.
INGREDIENTS
- 400 grams ripe tomatoes, finely chopped
- 1 onion, finely chopped
- 2 tablespoons cooking oil
- 3 - 4 garlic cloves, roughly chopped
- 2 - 3 green chillies, deseeded and finely chopped
- Salt to taste
- 2 teaspoons sugar
- 1 tablespoon lemon juice
- ½ teaspoon cumin seeds, dry roasted and ground
