PEAR AND CRANBERRY CRACKERS

Preparation Method :

  • Preheat the oven to Gas Mark 5 / electric oven 190oC.
  • Combine the filling ingredients in a large bowl and mix thoroughly
  • Lay one sheet of pastry on the work surface, brush with the melted butter and repeat with two more sheets.
  • Spoon the pear and cranberry mixture on to the long side, leaving a gap at either end. Roll up the pastry to enclose the filling and end up with the seam underneath.
  • Pinch each end to create a cracker. Brush with the melted butter and lay on a baking sheet Repeat to make six crackers.
  • Sprinkle each cracker with caster sugar and bake in the oven for about 20 - 30 minutes.
  • Cover the 'ends' with pieces of foil to prevent them from burning before the centers of the crackers are cook. Serve hot or warm, with brandy custard.

INGREDIENTS

  • 5 tablespoon butter, melted
  • 18 - 20 small sheets filo pastry
  • Caster sugar

For the filling

  • 100 grams fresh cranberries
  • 50 grams chopped walnuts
  • Grated zest and juice of 1 lemon
  • 5 tablespoon caster sugar, plus extra for sprinkling
  • 2 tablespoons ground almonds
  • 1 teaspoon ground cinnamon
  • 4 large pears, peeled, cored and diced
