- Preheat the oven to Gas Mark 5 / electric oven 190oC.
- Combine the filling ingredients in a large bowl and mix thoroughly
- Lay one sheet of pastry on the work surface, brush with the melted butter and repeat with two more sheets.
- Spoon the pear and cranberry mixture on to the long side, leaving a gap at either end. Roll up the pastry to enclose the filling and end up with the seam underneath.
- Pinch each end to create a cracker. Brush with the melted butter and lay on a baking sheet Repeat to make six crackers.
- Sprinkle each cracker with caster sugar and bake in the oven for about 20 - 30 minutes.
- Cover the 'ends' with pieces of foil to prevent them from burning before the centers of the crackers are cook. Serve hot or warm, with brandy custard.

- 100 grams fresh cranberries
- 50 grams chopped walnuts
- Grated zest and juice of 1 lemon
- 5 tablespoon caster sugar, plus extra for sprinkling
- 2 tablespoons ground almonds
- 1 teaspoon ground cinnamon
- 4 large pears, peeled, cored and diced
