CINNAMON BRIOCHE TOAST WITH FRIED APPLES

Preparation Method :

  • Place the sultanas and brandy or apple juice in a bowl and leave to soak for about 20 - 22 minutes. Preheat the oven to Gas Mark 2 / electric oven 150°C.
  • Heat half the butter in a large frying pan over a moderate heat, stir in the cinnamon and fry the bread, until golden brown and crisp.
  • Place on a baking sheet, cover loosely with foil and keep warm in the oven.
  • Add the remaining butter to the frying pan, together with the sugar and allow them to bubble together for a minute.
  • Add the apple slices to the pan and increase the heat. Coat the apples in the creamy sugar and fry for a few minutes until the apples are golden brown and tender.
  • Stir in the sultanas and the brandy or apple juice and heat through for a minute.
  • Cut each slice of brioche toast in half diagonally and arrange on warmed serving plates.
  • Spoon over the apple slices and pan juices and serve with ice cream.

INGREDIENTS

  • 150 grams unsalted butter
  • 2 teaspoons ground cinnamon 
  • 50 grams sultanas
  • 3 tablespoon brandy or apple juice
  • 6 slices of brioche
  • 3 tablespoon light brown sugar
  • 6 medium firm dessert apples, peeled, cored and cut into segments
