BRANDY SNAP CUPS

Preparation Method :

  • Melt the butter, sugar, lemon rind and golden syrup over low heat.
  • Add ginger, flour and melted ingredients and mix well. Grease a baking tray.
  • Drop teaspoonfuls of the mixture onto the tray. Do not put more than four at one time in order to allow them to spread.
  • Bake in batches in a slow oven, at Gas Mark 3, for about 10 minutes.
  • When the brandy snaps are golden brown in colour, Remove from oven and allow to stand for few seconds.
  • Loosen it by using a sharp knife.
  • Lift off the baking tray and place each brandy snap over an orange, mould it round the orange top to make a cup shape.
  • If the snaps are too hard to take off the tray then put it back in the oven to soften.
  • Remove the snap cups to a cooling rack once they have hardened enough to keep their shape.
  • Store these biscuits in an airtight container.
  • Serve a large scoop of ice cream in each brandy snap cup.

INGREDIENTS

  • 100 grams butter or margarine
  • 50 grams caster sugar
  • ½ teaspoon finely grated lemon rind
  • 3 tablespoon golden syrup
  • 50 grams plain flour, sifted
  • 2 teaspoon ground ginger
  • A little cooking oil
  • 4 large oranges
