RASPBERRY AND WHITE CHOCOLATE TRIFLE

Preparation Time :
25 minutes

Preparation Method :

  • Cut the sponges into small pieces and place in the bottom of a glass serving bowl. Sprinkle the brandy or kirsch. Spoon the raspberries over the sponges.
  • Divide the custard between 2 bowls. Add the cream cheese and half the sugar to one and mix thoroughly.
  • Add the chocolate and remaining sugar to the other and mix well.
  • Add half the cream to the chocolate mixture.
  • Spoon the cream cheese mixture on to the raspberries, level the surface and with the chocolate mixture.
  • Spread the remaining cream on top. Pile some fresh raspberries in the middle and chill for at least an hour or until ready to serve. Decorate with fresh mint.

INGREDIENTS

  • 500 grams of custard
  • 250 grams cream cheese
  • 3 tablespoon caster sugar
  • 100 grams white chocolate, melted and cooled
  • 4 trifle sponges
  • 3 tablespoon brandy or kirsch
  • 250 grams fresh or frozen and thawed raspberries
  • 300 ml whipping cream, whipped
  • Fresh raspberries and mint leaves, to decorate
