- Cut the sponges into small pieces and place in the bottom of a glass serving bowl. Sprinkle the brandy or kirsch. Spoon the raspberries over the sponges.
- Divide the custard between 2 bowls. Add the cream cheese and half the sugar to one and mix thoroughly.
- Add the chocolate and remaining sugar to the other and mix well.
- Add half the cream to the chocolate mixture.
- Spoon the cream cheese mixture on to the raspberries, level the surface and with the chocolate mixture.
- Spread the remaining cream on top. Pile some fresh raspberries in the middle and chill for at least an hour or until ready to serve. Decorate with fresh mint.

- 100 grams white chocolate, melted and cooled
