HAZELNUT CHERRY TRUFFLES

Preparation Time :
45 minutes

Preparation Method :

  • Combine cherries and brandy in bowl; stand 1 hour. Drain cherries, reserve liquid.
  • Combine sifted icing sugar and nuts in medium bowl; stir in egg white, rum, cream, white chocolate and reserved liquid. Refrigerate 1 hour, stir occasionally.
  • Mould level tablespoons of mixture around cherries, place on foil-covered trays; refrigerate until firm.
  • Dip truffles into combined dark chocolate and oil; refrigerate on trays. Drizzle with white chocolate; refrigerate.

INGREDIENTS

  • 450 grams white chocolate, melted
  • 350 grams dark chocolate, melted
  • 100 grams glace cherries
  • 2 tablespoons brandy
  • 75 grams icing sugar mixture
  • 175 grams packaged ground hazelnuts
  • 1 egg white, lightly beaten
  • 2 teaspoons dark rum
  • 50 ml cream
  • 1 tablespoon oil
