Preparation Method :
- Preheat the oven to Gas Mark 4 / electric oven 180°C.
- Sift the flour and cinnamon together into a large bowl and then stir in the caster sugar ground almonds and ground rice.
- Add the butter and rub into the flour mixture like breadcrumbs, pour in the eggs and mix together until there are no dry ingredients.
- Butter the base and sides of a loose-bottomed tin and line the sides with baking parchment.
- Spread just over half the mixture over the base of the tin. Sprinkle on the blackcurrants and then dot with tablespoons of the remaining mixture.
- Use a palette knife to spread the mixture to cover the blackcurrants.
- Bake for about 30 minutes or until it is firm to the touch. Leave to cool in the tin for 10 minutes.
- Dust with icing sugar and serve with cream or ice cream.

- 150 grams unsalted butter, cubed
- 150 grams plain flour
- 1 teaspoon ground cinnamon
- 150 grams caster sugar
- 100 grams ground almonds
- 3 medium eggs, beaten lightly
- Icing sugar, sifted, to decorate
