Preparation Method :
- Whip the double cream in a bowl until soft peaks form.
- Beat together the mascarpone, sugar, egg yolks and vanilla seeds in a separate bowl until light in colour and Huffy. Lightly fold in the whipped double cream.
- Mix together the orange juice in one bowl. Dip half of the sponge fingers in the mixture. Line the base of a cake pan with same.
- Spread one-third of mascarpone mixture on the sponge fingers. Add a layer of mango slices on top.
- Repeat the process and reserve some mango slices to serve.
- Cover and chill the cake for 2 hours or until firm.
- Carefully remove the sides and base of cake pan and transfer tiramisu to a plate. Top it with remaining mango slices and serve immediately.

- 250 grams Mascarpone Cheese
- 300 ml double cream
- 25 grams caster sugar
- 1 egg yolk
- ½ Vanilla bean, split and seeds extracted
- 75 ml orange juice
- 150 grams sponge fingers
- 1 ripe and fresh mangoes, peeled and thinly sliced
- 2 passion fruit, pulp only
- Cocoa powder, to serve
