SUMMER FRUIT TARTLETS

Preparation Method :

  • The Pastry: Sift the flour and sugar into a bowl and stir in the almonds. Rub in the butter until the mixture resembles breadcrumbs.
  • Add the egg yolk and milk, mix to form dough. Turn onto a lightly floured counter and knead briefly. Wrap and chill in the refrigerator for about 20 minutes.
  • Preheat the oven to 190°C / 375°F / Gas mark 5. Roll out the pastry and use individual brioche pans. Prick the pastry bottoms with a fork.
  • Press a piece of foil into each tartlet, cover the edges and bake in the preheated oven at least for 10 minutes or until light golden-brown.
  • Remove the foil and bake for another 2 minutes. Transfer the pastry shells to a wire rack to cool.
  • The Filling: Mix the cream cheese and sugar together in a bowl.
  • Put a spoonful of filling in each pastry shell and arrange the fruit on top. Dust with sifted confectioners' sugar and serve immediately.

  • 150 grams confectioners' sugar
  • 75 grams ground almonds
  • 1 stick unsalted butter, diced and chilled
  • 275 grams all-purpose flour
  • 1 egg yolk
  • 1 tablespoon milk

The Filling

  • 300 grams fresh summer berries and currants
  • 275 grams cream cheese
  • Confectioners' sugar, to taste
