Preparation Method :
- The Pastry: Sift the flour and sugar into a bowl and stir in the almonds. Rub in the butter until the mixture resembles breadcrumbs.
- Add the egg yolk and milk, mix to form dough. Turn onto a lightly floured counter and knead briefly. Wrap and chill in the refrigerator for about 20 minutes.
- Preheat the oven to 190°C / 375°F / Gas mark 5. Roll out the pastry and use individual brioche pans. Prick the pastry bottoms with a fork.
- Press a piece of foil into each tartlet, cover the edges and bake in the preheated oven at least for 10 minutes or until light golden-brown.
- Remove the foil and bake for another 2 minutes. Transfer the pastry shells to a wire rack to cool.
- The Filling: Mix the cream cheese and sugar together in a bowl.
- Put a spoonful of filling in each pastry shell and arrange the fruit on top. Dust with sifted confectioners' sugar and serve immediately.
