'JAFFA CAKE' TART

Preparation Method :

  • Preheat the oven to Gas Mark 6 / electric oven 200°C.
  • Place the flour and sugar in a bowl and mix. Add the butter and rub into the flour mix. Shape the mixture to form a golf ball, wrap in cling film and chill at least for 15 - 20 minutes.
  • Press the shortbread into the base of a 20 cm loose-bottomed flan tin. Prick it lightly and bake in the oven for 10 - 12 minutes or until golden brown. Allow to cool.
  • Melt the chocolate with 2 tablespoons of water in a bowl set over a pan. Remove from the heat and mix thoroughly.
  • Stir in a tablespoon of butter with Cointreau. Allow to cool for a few minutes and then fold in the whipped cream.
  • Spread the marmalade evenly over the shortbread base followed by the chocolate mixture. Chill at least for 10 - 15 minutes.
  • Sift some cocoa powder over the tart to decorate.

  • 50 grams thin-cut orange marmalade
  • 5 tablespoon plain flour
  • 3 tablespoon caster sugar
  • 50 grams butter, softened
  • 100 grams plain chocolate
  • 1 tablespoon butter, softened
  • 2 tablespoon Cointreau
  • Cocoa powder, to decorate
