CHOCOLATE TARTS

Preparation Method :

  • Sieve the flour. Rub the butter into the flour till the mixture resembles breadcrumbs.
  • Add sugar, salt, vanilla and egg yolk and mix well.
  • Add cold water to make the pastry hold together. Make a ball of dough. Don't knead too much. Cover with clingfilm. Refrigerate at least for 20 - 30 minutes.
  • Add superfine sugar to the dough and carefully roll into individual tarts. Bake it at 180°C / 350° F for 15- 20 minutes or till golden brown.
  • Whisk the cream with the golden syrup in a heavy bottomed pan over medium heat. Pour into another container. Cool.
  • Chop the chocolate into small pieces. Melt it over a double boiler until smooth.
  • Whisk the cream into the melted chocolate. Blend in 3 tablespoons of the softened butter.
  • Spoon into individual baked tarts. Keep to cool in the refrigerator till the chocolate sets. Bring it to room temperature one hour before serving.

INGREDIENTS

  • A pinch salt
  • Few drops vanilla essence
  • A pinch of sugar
  • 2 egg yolks
  • 1 tablespoon little chilled water
  • 100 grams refined flour
  • 5 tablespoons superfine sugar
  • 50 grams unsalted butter, cubes

  • 5 tablespoons golden syrup
  • 50 grams butter, softened
  • 250 grams dark chocolate
  • 150 ml cream
