Preparation Method :
- Sieve the flour. Rub the butter into the flour till the mixture resembles breadcrumbs.
- Add sugar, salt, vanilla and egg yolk and mix well.
- Add cold water to make the pastry hold together. Make a ball of dough. Don't knead too much. Cover with clingfilm. Refrigerate at least for 20 - 30 minutes.
- Add superfine sugar to the dough and carefully roll into individual tarts. Bake it at 180°C / 350° F for 15- 20 minutes or till golden brown.
- Whisk the cream with the golden syrup in a heavy bottomed pan over medium heat. Pour into another container. Cool.
- Chop the chocolate into small pieces. Melt it over a double boiler until smooth.
- Whisk the cream into the melted chocolate. Blend in 3 tablespoons of the softened butter.
- Spoon into individual baked tarts. Keep to cool in the refrigerator till the chocolate sets. Bring it to room temperature one hour before serving.
