Preparation Method :
- Preheat the oven to Gas Mark 6 / electric oven 200°C. Place a baking sheet in the oven.
- Brush melted butter inside the soufflé dish that has a base with a diameter of 6 inches and 4 inches high. Dust the buttered surface with a little caster sugar.
- Spoon the custard into a mixing bowl split the vanilla pod lengthways and scrape the seeds into the custard.
- Pour in the melted white chocolate and stir to combine. Add the egg yolks, one at a time, stirring. Fold in the cream.
- Whisk the egg whites in a large bowl until they are stiff. Fold a spoonful of the whites into the chocolate mixture and then fold in the remainder.
- Quickly spoon the soufflé mixture into the prepared dish.
- Place the dish on the preheated tray and bake for 40 minutes or until well risen and a little custard visible in the centre. Sprinkle with cocoa and serve immediately.
