Preparation Method :
- Preheat the oven to moderately hot (190°C / 375°F, Gas Mark 5). Lightly beat the egg yolks with the sugar, flour, cream and lemon rind.
- Whisk the egg whites with the salt until firm peaks form. Pour the yolk mixture into the whites and fold in gently.
- Heat the butter in a large omelette pan or other heavy pan that can go in the oven. When the butter is sizzling, but not brown, pour in the omelette mixture.
- Gently level the top. Place the pan in the oven for 12 to 15 minutes or until golden and risen (do not open the door before 10 minutes).
- Spoon the warm jam down the centre, fold the omelette over, dust with caster sugar and slide on to a heated dish.

- 6 eggs, separated
- 2 tablespoon sugar
- 4 teaspoons plain flour
- 2 tablespoons single cream
- Grated rind of lemon
- Pinch of salt
- 30 gram butter
- 4 tablespoons jam, warmed
- Caster sugar for dusting
