SWEET SOUFFLE OMELETTE

Preparation Method :

  • Preheat the oven to moderately hot (190°C / 375°F, Gas Mark 5). Lightly beat the egg yolks with the sugar, flour, cream and lemon rind.
  • Whisk the egg whites with the salt until firm peaks form. Pour the yolk mixture into the whites and fold in gently.
  • Heat the butter in a large omelette pan or other heavy pan that can go in the oven. When the butter is sizzling, but not brown, pour in the omelette mixture.
  • Gently level the top. Place the pan in the oven for 12 to 15 minutes or until golden and risen (do not open the door before 10 minutes).
  • Spoon the warm jam down the centre, fold the omelette over, dust with caster sugar and slide on to a heated dish.

INGREDIENTS

  • 6 eggs, separated
  • 2 tablespoon sugar
  • 4 teaspoons plain flour
  • 2 tablespoons single cream
  • Grated rind of lemon 
  • Pinch of salt
  • 30 gram butter
  • 4 tablespoons jam, warmed 
  • Caster sugar for dusting
