- Wash and chop the fruit, then place in a pan with a tablespoon of sugar.

- Heat the milk until just coming to the boil. Sprinkle over the semolina and remaining sugar.

- Whisk the egg white until stiff and fold into the semolina. Spoon on top of the fruit and sprinkle with the nutmeg.
- Bake in a preheated moderate oven for 20 minutes until risen and golden.
