MIXED BERRY SORBET

Preparation Time :
2 hours 20 minutes

Preparation Method :

  • Heat the sugar with a cup of water and the lemon juice in a medium pan, until the sugar has dissolved. Remove from the heat and allow it to cool.
  • Place the fruit in a blender and blend until smooth.
  • Add the sugar mixture to the blender with the blended fruit and blend for 10 seconds.
  • Pour the mixture through a nylon sieve to remove any pips. Transfer the strained mixture to a freezer-proof container.
  • Whisk the egg whites until they form soft peaks. Fold into the berry mixture and then place in the freezer.
  • Remove the sorbet from the freezer after an hour and beat well to remove any ice crystals. Return to the freezer.
  • Beat the sorbet again after an hour and then leave to freeze completely until set.

INGREDIENTS

  • 1 kg mixed summer berries 
  • 250 grams caster sugar 
  • 2 tablespoon lemon juice
  • 2 egg whites
