MELON AND GINGER SORBET

Preparation Time :
35 minutes

Preparation Method :

  • Put the melon, lime juice and ginger into a food processor and process until smooth.
  • Pour into a measuring cup and make up to 2 cups with cold water.
  • Pour into a bowl and stir in the sugar. Beat in the egg white.
  • Transfer to a freezer proof container and freeze for about 3 -5 hours.
  • Serve in scoops with strawberries or raspberries.

INGREDIENTS

  • Juice of 2 limes
  • 1 tablespoon grated fresh ginger
  • 75 grams unrefined superfine sugar
  • 1 ripe melon, peeled, seeded, and cut into chunks
  • 1 egg white, lightly whisked
  • Fresh strawberries or raspberries, to serve
