MANGO AND GINGER SORBET

Preparation Method :

  • To prepare the sorbet, place two of the mangoes, the lime juice, stem ginger; orange juice and caster sugar in a food processor and puree them.
  • Transfer the puree to a non-reactive metal bowl and freeze for 2 hours.
  • Spoon the sorbet back into the food processor and process until smooth, being very not to over-process or it will melt.
  • Pour it into a plastic carton and freeze until solid
  • Prepare the fruit: peel and de-seed the papaya and cut into small chunks; peel pineapple and cut into the same sized chunks; peel the kiwi fruit and cut each into wedges.
  • Peel the banana and cut into large chunks. Scoop the sorbet on to dessert plates and arrange the prepared fruit attractively around the sorbet.

INGREDIENTS

  • 1 papaya  
  • 1 small pineapple
  • 2 kiwi fruit
  • 1 large banana
  • 3 large, ripe mangoes, peeled, stoned and cut into 2.5 cm (I -inch) chunks
  • Juice of 1 lime
  • 1 piece of stem ginger in syrup, chopped
  • 150 ml fresh orange juice
  • 150 grams caster sugar
