GOOSEBERRY AND MINT SORBET

Why is it that with Gooseberry and Mint Sorbet, almost everybody tends to crave for it even during midnight? Simply because it has its sprinkled ingredients like 2-egg white, brown sugar, gooseberries, clear honey and dried mint! They are wonderfully mixed so that when you gulp it on, you’ll be yearning for more!

Preparation Time :
3 hours 30 minutes

Cooking Time :
30 minutes

Preparation Method :

  • Place the gooseberries in a pan with sugar, the honey and mint. Cover and simmer for 10 to 15 minutes until soft, then allow to cool.
  • Work the fruit in a blender or briefly in a food processor to make a puree. Rub through a sieve to remove the pips.
  • Blend the puree with the yogurt. Whisk the egg white until stiff, then gradually whisk in the remaining sugar.
  • Fold into the fruit, then spoon the mixture into a rigid freezer proof container. Cover and freeze for 3 hours.
  • Place in the refrigerator for 20 minutes before serving.
  • Scoop into glass bowls and decorate with mint sprigs.

INGREDIENTS

  • 750 grams fresh, frozen or bottled gooseberries
  • 4 tablespoons soft brown sugar
  • 2 tablespoon clear honey 
  • 15 large mint sprigs or 1 teaspoon dried mint 
  • 300 ml plain low-fat yogurt 
  • 2 egg white
  • Mint sprigs, to decorate
