TOMATO BREAD AND BUTTER PUDDING

Preparation Method :
- Preheat the oven to 180°C/350°F/ Gas 4. Blend together the butter and pesto sauce in a small bowl. Slice the herb bread and spread one side of each slice with the pesto mixture.
- In an oval ovenproof dish, layer the bread slices with the mozzarella and tomatoes, overlapping each new layer with the next.
- Beat together the milk, eggs and oregano, season well and pour over the bread. Leave to stand for 5 minutes.
- Sprinkle over the grated cheese and bake the pudding in the oven for about 40 minutes or until golden brown and just set. Serve immediately, straight from the dish, sprinkled with more coarsely chopped oregano.

- Salt and ground black pepper
