NACHNI PUDDING (SATWA)

Preparation Method :

  • Soak the nachni, add wheat overnight.
  • Grind the soaked wheat and nachni with water. Extract the juice using a fine sieve, so that you get 5 cups liquid.
  • Boil it in a heavy bottomed pan. Then reduce the heat and add jaggery and salt.
  • Stir continuously and make sure that the mixture should not stick to the bottom of the pan.
  • Add the milk and also the cashewnuts. Stir continuously for about 30 minutes or till the mixture is of a thick consistency with shiny coating.
  • Add cardamom powder. Mix well. Pour onto a greased plate. Cool till set. Cut into squares. Refrigerate.

INGREDIENTS

  • 300 ml milk
  • 150 grams jaggery
  • 100 grams nachni (ragi)
  • 1 teaspoon wheat (whole)
  • ¾ teaspoon salt
  • ½ teaspoon cardamom
  • 2 tablespoons cashewnuts, chopped
