LAYERED SUMMER PUDDING

Preparation Method :
- Place the fruit in a pan with the sugar and water. Simmer gently for 15 minutes until the fruit is soft.
- Stir in the sherry and allow to cool. Strain off some of the juice and reserve about two-thirds.
- In a glass dish or flat-bottomed mould, layer the fruit and bread.
- Dissolve the gelatine in the reserved juice according to the packet instructions.
- Spoon the mixed juice and gelatine over the top layer of bread. Cover with foil and chill in the refrigerator overnight.
- Remove the foil, and then carefully turn out the pudding on to a dish.
- Arrange the reserved fruits, chopped and whole, on top of the pudding.
- Serve with honey to sweeten.

- 1 kilogram soft fruits, hulled and stems removed, with a few reserved to decorate
- 50 grams light soft brown sugar
- 10 tablespoons water
- 2 tablespoon sherry
- 10 slices whole meal bread, crusts removed
- 2 teaspoon powdered gelatine
- 4 tablespoons soft fruits, to decorate
