LIME BREAD AND BUTTER PUDDING

Preparation Method :
- Preheat the oven to Gas Mark 4 / electric oven 180°C.
- Butter the fruit bread slices and then spread with lime marmalade. Cut the slices into six pieces. Butter the six soufflé dishes. Layer the bread in the ramekin dishes.
- Whisk together the lime zest, cream, milk, eggs, egg yolks with sugar and strain through a sieve into a jug.
- Pour the custard over the bread and leave to soak for about 25 - 30 minutes.
- Bake for about 20 - 30 minutes or until the custard has set. Allow to cool for some time.
- Heat 1-2 tablespoons of the marmalade and sieve to remove any peel.
- Loosen the edges of the puddings, invert and place in the centre of serving Plates.
- Brush the tops with the marmalade glaze. Serve surrounded with some single cream.
