FRAGRANT RICE PUDDING

35 minutes

Preparation Method :

  • Put the rice, milk, crushed cardamom seeds, vanilla extract and sugar, if using, into a small saucepan.
  • Bring to the boil and simmer very gently for about 20 minutes, stirring frequently.
  • When the rice grains are very soft, remove from the heat and leave to cool.
  • Thin with a little milk or orange juice if necessary.
  • Put the orange segments into a dish and drizzle over the honey and orange flower water.
  • Toss gently together and serve with the rice pudding.

INGREDIENTS

  • 10 grams short-grain pudding rice
  • 350 ml full-fat milk
  • Seeds from 2 cardamom pod, crushed
  • 1 teaspoon vanilla extract
  • 3 teaspoon sugar (optional)
  • Milk or orange juice, for thinning (optional)
  • 2 large orange, peel and pith removed and cut into segments
  • 2 teaspoon clear honey
  • Few drops of orange flower water
