Preparation Method :
- Soak the dates in rum for about 20 - 30 minutes. Deseed and chop into bits.
- Dissolve the custard powder in a little cold milk. Boil the remaining milk.
- Add the custard mixture and sugar and cook till it is thick on low heat.
- Caramelize 2 tablespoons sugar, add a little water and mix well. Add this to the custard.
- Mix in the essence and the dates. Stir in the cream.
- Melt the gelatine in 75 ml of warm water. Cool. Blend it into the mixture.
- Pour into a wet mould and chill till set. Unmould and serve with chopped walnuts.

- 6 - 8 dates
- 1 tablespoon rum
- 2 teaspoons gelatine
