DATE AND CARAMEL CUSTARD PUDDING

Preparation Method :

  • Soak the dates in rum for about 20 - 30 minutes. Deseed and chop into bits.
  • Dissolve the custard powder in a little cold milk. Boil the remaining milk.
  • Add the custard mixture and sugar and cook till it is thick on low heat.
  • Caramelize 2 tablespoons sugar, add a little water and mix well. Add this to the custard.
  • Mix in the essence and the dates. Stir in the cream.
  • Melt the gelatine in 75 ml of warm water. Cool. Blend it into the mixture.
  • Pour into a wet mould and chill till set. Unmould and serve with chopped walnuts.

INGREDIENTS

  • 2 tablespoons fresh cream
  • 2 tablespoons chopped walnuts
  • 350 ml milk
  • 2 tablespoons custard powder
  • 3 tablespoons sugar
  • 2 tablespoons sugar for caramel
  • 6 - 8 dates
  • 1 tablespoon rum
  • 2 teaspoons gelatine
