Preparation Method :
- Preheat the oven to Gas Mark 5 / electric oven 190°C.
- Sift the flour; cinnamon and baking powder into a bowl and stir in the caster sugar.
- Whisk the oil, milk and egg yolks together and pour over the flour mixture. Beat until smooth. Whisk the egg whites until they are stiff.
- Fold a spoonful into the mixture to loosen it and then fold in the remainder with the apples, dates and walnuts.
- Spoon into a greased 9-inch flan or gratin dish, level the surface and bake in the oven for about 30 - 40 minutes, until golden brown and firm to the touch. Serve warm, with custard or cream.
