APPLE AND WALNUT PUDDING

Preparation Method :

  • Preheat the oven to Gas Mark 5 / electric oven 190°C.
  • Sift the flour; cinnamon and baking powder into a bowl and stir in the caster sugar.
  • Whisk the oil, milk and egg yolks together and pour over the flour mixture. Beat until smooth. Whisk the egg whites until they are stiff.
  • Fold a spoonful into the mixture to loosen it and then fold in the remainder with the apples, dates and walnuts.
  • Spoon into a greased 9-inch flan or gratin dish, level the surface and bake in the oven for about 30 - 40 minutes, until golden brown and firm to the touch. Serve warm, with custard or cream.

INGREDIENTS

  • 750 grams Cooking apples, peeled, cored and cut into chunks
  • 3 tablespoon dates, cut into small pieces
  • 100 grams caster sugar
  • 3 tablespoon vegetable oil 
  • 150 grams self-raising flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 3 tablespoon milk
  • 3 medium eggs, separated
  • 25 grams walnut pieces
