RUM AND RICOTTA PUDDING WITH TOASTED ALMONDS

Preparation Method :

  • Mix together the egg yolks, icing sugar and ricotta to a thick creamy texture.
  • Stir in the rum, toasted almonds and dessert wine, then fold in the whipped cream.
  • Sprinkle the top of each serving with a few more almonds and serve with prato biscuits.

INGREDIENTS

  • 75 grams icing sugar, sieved
  • 225 grams whipping cream, whipped until stiff
  • 45 grams slivered toasted almonds
  • 50 ml dark rum
  • 475 grams ricotta
  • 3 large egg yolks
  • 1 tablespoon dessert wine, (Marsala)
