MOLTEN CHOCOLATE AND YOGURT PUDDINGS

Preparation Method :

  • Preheat oven to 200°C / 400°F / gas mark 6.
  • Grease four mini pudding basins or ramekins with a little oil and line the bases with a round of baking parchment.
  • Put chocolate and creme fraiche in a large bowl and place the bowl over a pan of simmering water. Leave until chocolate has melted, then stir until smooth.
  • In another bowl, beat eggs, sugar, vanilla and flour together until evenly mixed.
  • Gradually beat in the melted chocolate. Spoon the mixture into prepared basins or ramekins and set them on a baking tray.
  • Bake for 10-12 minutes or until set but soft in the centre. Turn puddings out onto serving plates, dust with cocoa powder and serve at once.

  • 225 grams plain chocolate, chopped
  • 150 ml creme fraiche
  • 3 large eggs
  • 50 grams dark brown sugar
  • ½ teaspoon vanilla essence
  • Canola oil, for greasing
  • 1 tablespoon plain flour
