Preparation Method :
- Beat the cream with the sugar till light and fluffy.
- Boil the milk and add in the the sugar, chocolate custard powder and essence over low heat in a heavy bottomed pan.
- When thickened, remove from heat, add butter and a pinch of salt. Cool.
- Mix the crumbled cake, walnuts in the custard mixture. Cool both in the fridge separately.
- Take a bowl. Put a layer of cream and then a layer of cake-custard.
- Repeat this once again. Ensure the last layer is of cream and grated chocolate. Keep to set for about 3 hours in the freezer.
INGREDIENTS
For the custard
- 750 ml milk
- 150 grams sugar
- 3 tablespoons chocolate custard powder
- 1 teaspoon chocolate essence
- 2 tablespoons unsalted butter
- A few drops of colour
For the cream
- 250 grams whipped cream
- 75 grams powdered sugar or icing sugar
For the cake
- 100 grams roasted walnuts
- 1 chocolate sponge cake
- Grated chocolate for garnish
